The term “catfish” can be confusing because there are different types of fish known by this name – the Siluriforme order to which they belong has over 2,400 known species. None of them have scales, and most have long “whiskers” (sensory filaments) on both sides of the mouth. The white flesh can be roasted, stewed, grilled or fried.
