Tender, but yet firmer than other mollusks, such as oysters, scallops are good grilled or prepared au gratin. In Brazil, the few existing farms are on the coast of Rio de Janeiro, São Paulo, and Santa Catarina, and they are not enough to meet the country’s demand. Therefore, a lot of what is served in restaurants in is frozen scallops from Chile or Canada. Fun fact: the traditional appetizer Casquinha de siri (Brazilian-style dressed crab) is often served in a scallop shell.
