Makes: Serves 2
Preparation Time: 20 minutes
- 1 WHOLE LOBSTER
- 2 TABLESPOONS OF BUTTER, AT ROOM TEMPERATURE
- ZEST OF 1 ORANGE
- SALT AND BLACK PEPPER TO TASTE
Boil water and salt in a deep pot; cook the lobster for 10 minutes and transfer to a bowl with ice cold water to prevent further cooking. Heat up a griddle or barbecue grill. Cut the lobster in half lengthways, so you’ll have two equal parts. While they are grilling, season the butter with salt, black pepper, and orange zest. Remove the lobster from the grill, butter it up, and serve.
IN DETAIL: Ceará and Rio Grande do Norte are two states that have kept the practice of preparing lobsters in an unelaborated way, found in beachside joints and restaurants alike.
