ESTÔMAGO DO BOI, ALSO called tripe, is the main ingredient of the tripe, a dish of Portuguese origin made with white beans, seasoning and side dishes such as pork ribs and sausage, to suit everyone’s taste. Many people, by the way, only refer to tripe using the name of this recipe. It can also be eaten breaded, parmigiana, in dumplings, in the oven or in other traditional dishes, such as tripe à lombeira and some versions of mocotó.
