Cut into fillets, this cartilaginous fish is the main ingredient for a famous moqueca (fish stew) in Bahia, together with coconut milk, tomato, bell peppers, cilantro and dende oil. Although the most common preparation method is stewing – it can be quite tasty just cooked in tomato sauce – there are also stingray recipes prepared in the oven or deep fried. Please note: fishing and eating Brazilian guitarfish (Rhinobatos horkelli), endemic to Brazil, is prohibited by the Brazilian Ministry of Environment since 2004, throughout the country.
