  • 20 LIMES
  • 1 KG SUGAR


Wash clean the limes, cut off the tip and bring them to a boil for 10 minutes. Discard the cooking liquid, add clean water to the limes and bring to a boil again. Scoop off inner parts of limes very carefully, not to damage the skin. Keep the peel in a pot with water and 1 tablespoon of baking soda. Repeat this procedure for three days in a row (twice more). On the fourth day, make a syrup with sugar and 1 litre of water. Add lime peel and set aside. On the last day, take the syrup and the fruit to the heat: cook until tender and the syrup reduces. Allow to cool, serve pure or filled with sweetened milk.
