Similarly to puffed tapioca flakes, it should not be confused with the manufactured product sold in Brazilian supermarkets as “tapioca”, which is in fact goma (hydrated manioc / tapioca starch). The granules are tiny manioc pieces that are cooked on a flat, hot surface that coagulates them into couscous- like fragments, which are then passed through a sieve. The product is used in pudding recipes (cuscuz de tapioca), ice creams, cakes and porridges.
