INGREDIENTS

  • ½ ONION, CHOPPED
  • 2 CLOVES OF GARLIC, CHOPPED
  • 2 TABLESPOONS CORN OIL
  • 2 CUPS LONG-GRAIN WHITE RICE
  • 2 CUPS COCONUT MILK
  • COCONUT MEAT IN CHUNKS, TO TASTE
  • SALT TO TASTE

PREPARATION

Sauté onion and garlic, until tender. Add rice and fry, coating the grains with oil. Pour in 4 cups of hot water, season with salt and cook over medium-high heat, with the pan covered. When grains are cooked, add coconut milk and mix. Serve with chunks of fresh coconut meat.
