INGREDIENTS

  • 2 HEAPED TABLESPOONS BUTTER
  • 6 RIPE BURRO BANANAS CUT IN HALF LENGTHWISE
  • 4 SLICES MANTEIGA CHEESE 0,5 CM THICK
  • SUGAR AND GROUND CINNAMON, FOR DUSTING

PREPARATION

Heat the butter and grill the banana on both sides. Transfer to a serving dish and set aside. In the same frying pan, grill the cheese on both sides, until golden brown. Place it on the top of the banana and dust with cinnamon sugar.

Another way of using up overripe bananas originated this dish typical from Pernambuco, where it was recognized as intangible heritage of the state. It is served until nowadays in one of the oldest restaurants of Recife (Pernambuco’s capital), called Leite, opened in 1882. Some folks prepare it with coalho cheese, but the traditional recipe is made with manteiga cheese.
