INGREDIENTS

  • 3 CUPS FLAKED QUICK GRITS
  • 1 CUP WATER
  • 1 TEASPOON SALT

PREPARATION

Combine all ingredients and let hydrating for 25 minutes, covered with a cloth. Transfer to a cuscuzeira and steam the dough. When steam starts to escape from the top of cuscuzeira, take off the heat and serve.

In detail: The couscous made in Brazil since the Portuguese colonization is very different from the original Arabic dish: the type of flour has changed considerably the recipe’s characteristics. There is even a special pan for preparing it: the cuscuzeira, a clay bowl with holes in the bottom.
