INGREDIENTS

  • 4 POTATOES, MEDIUM DICED
  • 3 CARROTS, MEDIUM DICED
  • 3 CHAYOTES, MEDIUM DICED
  • 1½ CUP FRESH PEAS
  • 1 EGG YOLK
  • 1 TABLESPOON YELLOW MUSTARD
  • ½ BOTTLE CORN OIL
  • JUICE OF ½ LIME
  • PARSLEY, CHOPPED
  • SALT AND GROUND PEPPER TO TASTE

PREPARATION

Cook vegetables separately in lightly salted water until al dente; strain and transfer to a bowl with ice water to stop cooking process. While they chill, prepare mayonnaise: whisk the egg yolk with mustard and pour the oil in a steady stream, whisking continuously until thicken. Season with lime juice, parsley, salt, and ground pepper. Add vegetables and stir gently, taking care not to smash them. Serve cold or chilled.
