Cow’s milk is present in the daily life of most Brazilians, from the time they start their morning drinking a latte with their breakfast. Butter, yogurts, cheeses, creams and other milk products also supply the kitchens all over the country. In dishes, it is used to prepare soups, breads and confections; is the pastry department, it is the basis for whipped and pastry cream. High in calcium and a good source of protein, milk helps in muscle building and bone health. Dairy cows were introduced in Brazil by the Portuguese in the sixteenth century, and today the production concentrates in the Southeast region, but also in the South and Midwest regions.
