Preparation Time: 10 minutes (plus the time to defrost the pulp)
- 1 KG PURE FROZEN AÇAÍ PULP
- 1½ CUP TAPIOCA FLAKES
- SUGAR OR SALT TO TASTE
Take the açaí pulp out of the fridge and set aside for 30 minutes, until partially thawed. Process in a blender until creamy. Season with sugar or salt to taste, as desired. Serve sprinkled with tapioca flakes.
Highly versatile, this Amazonian fruit can be used in both savoury and sweet dishes. In the North of Brazil, especially in Pará state, açaí is served with fresh fish, as a creamy side dish. In the Southeast, the blended pulp is served cold, with fruits, guarana syrup and granola. It is also used as an ingredient of juices, ice creams, liqueurs and jellies.
