Toyassu pecari

IT CAN BE CONFUSED with collared peccary, which belongs to the same Tayassu genus, but the meat of the white-lipped peccary is redder. Low in fat and in cholesterol, the sharply flavored, it is sold in cuts like fresh ham, shoulder, chops and ribs. In Brazil, the recently established producing farms are located mainly in the Midwest and Southeast regions. Fun fact: the name of an indigenous ethnic group of Acre, Yawanawá, means “white-lipped peccary people”.
