This is a genetically improved fish, with reddish skin. The culinary uses are similar to those listed for regular (Tilapia rendalli) tilapia: it can be grilled, deep-fried or roasted. In the states of the Northeast, such as Pernambuco and Rio Grande do Norte, there are government incentives for the commercial farming of red tilapia.
